Beer and Cheese Dip

While eating out recently, my daughter and I fell completely in love with a pretzel dip which was advertised as being made of beer and cheddar cheese.  So on her next night off we decided to give a try at recreating the creamy treat.  It turned out so well, I decided that you might like to know how to make it for family and friends.




This isn't a cheap dip as you need to use a good, aged, white cheddar.

What you need:

1/2 to 3/4 pound of aged white cheddar (use more for a richer taste, if your budget allows)
1/2 cup of Parmesan cheese, shredded
6-8 ounces of beer, any brand. You can even use non-alcoholic if you wish


Pour the beer into a sauce pan and begin warming it on low heat.  Chop the cheddar cheese into small pieces.  Add to the heating beer.  Add the Parmesan cheese shreds.  This is a salty cheese which means there is no need to add seasoning!  Whisk the mix regularly, until all cheese is melted.  The sauce will be thin.  If you want to add some chopped tomato and peppers to it at this time, it makes a great sauce for chicken!  To use as a dip, it needs to be refrigerated for a few hours.  It thickens a lot as it cools but thins out a bit as you reheat for serving.  Enjoy with pretzels or pretzel chips.  The flavor is so rich and good, giving truth to the old saying about keeping it simple.
