Smores - An Addiction

Disclaimer - these are addictive treats!  If you are a person who doesn't control your chocolate consumption easily, then perhaps this isn't the treat for you.  I honestly acknowledge that I have never been able to stop at one.
 
I learned to make this treat as a teenager, working in a homemade candy shop in Tulsa.  This was my favorite then and has been inherited as the same by many in my family. 

What you need:

Golden Grahams Cereal (you can use generic but it just isn't the same)
mini-marshmellows
milk chocolate chips

What you do:
Melt your chocolate in the microwave, being very careful not to burn it!!!  This is critical.  If you don't feel confident using the microwave, just use a double-boiler.  Put chocolate in a microwave container and into the unit for 10 second bursts.  Between EACH round, remove the chocolate and stir.  Once you get most of it melted, you can just stir the pieces to melt them completely since they will contain enough heat to keep them from the microwave again.  I usually do 3, 10-second blasts. 

Pour about 1/2 the package of cereal into a large bowl.  You can always add more if you have extra chocolate to use up.  Stir the melted chocolate into the cereal and mix the cereal well.  You don't want chocolate puddling in the bottom but everything needs to be well coated. 
 

Add the marshmellows (now that the heat from the chocolate has dissapated and they won't melt), about 1/2 a bag should do it. 

How does it look to you?  Enough of your favorite ingredient?  If not, add more of what you love best!  Pour out the mixture into a jelly roll pan with a layer of wax paper in it.  You can let the smores set by placing them aside on your counter but if you can't wait much longer - put the pan in the fridge!  When you can't wait another second - break off a generous helping and enjoy.  If you're on a restrictive diet - make sure you get 1 large piece so that you don't end up going back for seconds - but it will be very hard to keep away from them for long.

  2. I usually store them on the counter with a sheet of wax paper overtop. Now that we live in a humid climate, I put them in the fridge. If you chill them, then let them rest on counter for a few minutes since they soften as they come to room temp.
