Random Interests Photos

When preparing a couple blogs recently, I came across some photos that didn't really fit any one blog but I wanted to share with you, just because they are interesting to me.

Cranberry Orange Biscotti

This is a perfect treat to make any ordinary day special!  I make it for Texas Annual Conference staff each year as we gather for the business of the church.  It is so good (and has become a staple at TAC) that people track me down at the hotel to get a few pieces!  The word biscotti roughly translates to twice baked, and these treats are just that.




What you need:
1 1/3 cup sugar

2 teaspoons baking powder

2 Tablespoons margarine

1 ounce orange extract

3 eggs

2 1/4 cup all-purpose flour

2 teaspoons dried, chopped orange peel (I get from Penzey's)

1 cup + Crasins

1 egg plus 1 teaspoon water (beaten together for egg wash)

Preheat your oven to 325 degrees. 

Combine sugar, baking powder, margarine and eggs.  Blend in the extract, orange peel, then add the flour (one cup at a time).  Last, add the cranberries.  This makes a very sticky dough.  Scrape dough into a long narrow line on a silpat non-stick mat-covered baking sheet.  Wet hands thoroughtly (I keep a bowl of water handy for working the dough).  Work dough with wet hands, smoothing it into two (2) 4"x18" lengths or one (1) 8"x18" length.  Measurements are approximate.  Brush the dough with the egg wash.

Bake for 25 minutes.  Remove and cool (slide mat with baked dough onto a rack) for 25 minutes.  Carefully take off mat and put dough onto a cutting board.  Slice into 1/2 inch segments.  If you baked one 8" wide batch, you will need to first cut it in half length-wise.  Place these segments onto an ungreased cookie sheet.  Bake for 20 minutes, one tray at a time.  Remove and cool.  Let air dry for a couple hours before storing in an airtight container.



This isn't a recipe that you can make quickly.  Whether you are making a single or double recipe - plan a minimum of one-and-a-half hours just to get to the final cooling stage. This recipe is great doubled.  Just be aware of timing.  Bake batch 2 while batch 1 is cooling and getting sliced.  Cool batch 2 while batch 1 is having it's second round as slices in the oven.  Good time-management is very helpful when making biscotti but it is truly worth the effort!

Lovin' My Tulsa Time

Tulsa, Oklahoma holds a dear place in my heart.  I moved there as a child when dad accepted a position with the City of Tulsa as Director of Street Maintenance.  I met my husband there.  Our daughter was born in Tulsa.  Tulsa is only a short 3.5 hours drive from our current home and with a move looming which will take our drive to more than 8 hours, we recently traveled north of the Red River to visit.  I thought you might like a tour of some of my favorite things about Tulsa...











The "pink hospital" aka Saint Francis.  Many family births and deaths have occurred in this facility.

LaFortune Park - the place to go for walks, picnics, ducks, golf...




Southroads Mall - My mom was the first FEMALE certified marketing director in the country and worked for this mall as I was growing up.  I had my first job here and spent many weekends helping out as a costume character or blowing up balloons.












 Quik Trip - a Tulsa original.  I have managed to pass on my love of the icee drink to our daughter, best made with multiple flavors!

Memorial High School - where I graduated in '82.  Love my Chargers!












Loops - a yarn and fiber store (actually they have 2 locations - South and Utica)! Do I really need to explain this to you?








Elmer's BBQ "It be Bad!" - yes, something so "bad" is so extremely good.








My in-laws: Theta and Leonard live in Tulsa.  This is our daughter, Melissa, with her grandparents.

S'more Pie in under 5 minutes

It's summer and that brings to mind camping adventures.  What would camping be - in your backyard or at a planned facility - without the campfire favorite of s'mores?  I have created a recipe that allows you to enjoy this favorite but as a cool treat.  It makes up in under 5 minutes and is a great last minute make for gatherings.  It's so yummy that, naturally, everyone will be asking for S'more!


What you need:
Graham Cracker Pie Crust
2 Small (or 1 Large) Container of Cool Whip
1 Large Box of Instant Chocolate Pudding Mix
1/2 Bag (about 2 Cups) Mini-Marshmellows
1/3 Cup Chocolate Syrup







You don't need to soften the Cool Whip if you are using a mixer.  Soften it if mixing by hand.  Add the pudding mix and begin blending.  Add the syrup to the mix. By hand, fold in the marshmellows gently.  Add this delicious chocolate mixture to the graham cracker pie crust.  Put in fridge to keep firm until you are ready to slice and serve.
