Easy, Cheesy Potato Skins

I love the potato skins you get as appitizers when I go out.  Unfortunately, I seldom have the opportunity to part-take of anything other than a main course.  This really easy recipe makes a great quick dinner or fills the bill for a protein snack.

What you need:

Frozen potatos (I prefer waffle or steak cuts)
Shredded Cheese (your choice)

Toppers to taste:
bacon bits, sour cream, green onion, ham, taco meat, leftover chicken, chili...  Use up those small amounts of leftovers to personalize your potatos.

Bake the potatos according to the package directions.  About 2/3rds through the baking process, add the cheese and any other toppings you need heated.  Finish baking.  Top with cool, non-heated toppings and serve.
